Chhole Bhature Recipe
Ingredients
For Chhole (Chickpea Curry):
- 1 cup chickpeas (soaked overnight)
- 2 medium onions, finely chopped
- 2 tomatoes, pureed
- 2 green chilies, slit
- 1-inch ginger, grated
- 3-4 garlic cloves, minced
- 2 tablespoons oil
- 1 teaspoon cumin seeds
- 2 teaspoons coriander powder
- 1 teaspoon red chili powder
- ½ teaspoon turmeric powder
- 1 teaspoon garam masala
- 1 teaspoon amchur (dry mango powder)
- Salt to taste
For Bhature:
- 2 cups all-purpose flour (maida)
- 2 tablespoons semolina (sooji)
- ½ cup yogurt
- 1 teaspoon baking powder
- A pinch of salt
- Water as needed
- Graminn Organik Oil for frying
Instructions
Step 1: Prepare Chhole
- Boil soaked chickpeas in a pressure cooker with 3 cups of water and a pinch of salt for 6-8 whistles or until soft.
- Heat oil in a pan. Add cumin seeds and let them splutter.
- Sauté onions until golden brown. Add garlic, ginger, and green chilies; cook for a minute.
- Stir in tomato puree and cook until oil separates.
- Add coriander powder, turmeric, red chili powder, and garam masala. Cook for 2 minutes.
- Add boiled chickpeas and mix well. Mash a few chickpeas for a thicker gravy.
- Add amchur and adjust salt. Simmer for 10 minutes.
Step 2: Make Bhature
- In a bowl, mix flour, semolina, baking powder, and salt.
- Add yogurt and mix. Gradually add water and knead into a soft dough.
- Cover and rest for 1 hour.
- Divide dough into small balls. Roll into medium-sized circles.
- Heat Graminn Organik oil in a deep pan and fry bhature until puffed and golden.
Step 3: Serve
Serve hot chhole with freshly fried bhature, pickles, and sliced onions. Enjoy!
