Chhole Bhature Recipe

Ingredients

For Chhole (Chickpea Curry):

  • 1 cup chickpeas (soaked overnight)
  • 2 medium onions, finely chopped
  • 2 tomatoes, pureed
  • 2 green chilies, slit
  • 1-inch ginger, grated
  • 3-4 garlic cloves, minced
  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • 2 teaspoons coriander powder
  • 1 teaspoon red chili powder
  • ½ teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1 teaspoon amchur (dry mango powder)
  • Salt to taste

For Bhature:

  • 2 cups all-purpose flour (maida)
  • 2 tablespoons semolina (sooji)
  • ½ cup yogurt
  • 1 teaspoon baking powder
  • A pinch of salt
  • Water as needed
  • Graminn Organik Oil for frying

Instructions

Step 1: Prepare Chhole

  1. Boil soaked chickpeas in a pressure cooker with 3 cups of water and a pinch of salt for 6-8 whistles or until soft.
  2. Heat oil in a pan. Add cumin seeds and let them splutter.
  3. Sauté onions until golden brown. Add garlic, ginger, and green chilies; cook for a minute.
  4. Stir in tomato puree and cook until oil separates.
  5. Add coriander powder, turmeric, red chili powder, and garam masala. Cook for 2 minutes.
  6. Add boiled chickpeas and mix well. Mash a few chickpeas for a thicker gravy.
  7. Add amchur and adjust salt. Simmer for 10 minutes.

Step 2: Make Bhature

  1. In a bowl, mix flour, semolina, baking powder, and salt.
  2. Add yogurt and mix. Gradually add water and knead into a soft dough.
  3. Cover and rest for 1 hour.
  4. Divide dough into small balls. Roll into medium-sized circles.
  5. Heat Graminn Organik oil in a deep pan and fry bhature until puffed and golden.

Step 3: Serve

Serve hot chhole with freshly fried bhature, pickles, and sliced onions. Enjoy!
